Simmered Green Beans

If your kid is like mine, or, you know, just a kid, vegetables can be a struggle. Que stage left and the arrival of my MIL, who apparently is the only one that can cook edible green beans. Gotta give my daughter credit where it’s due, these are damn delicious green beans.

Prep Time: 10 min

Cook Time: 30-60 min

Total Time: 40 min to 1 hr 10 min

Serves 3-4

  • 1 pound fresh green beans
  • 1/4 – 1/2 yellow onion, fine diced
  • 1 clove garlic, mined or grated
  • Beef or chicken broth
  • Salt and pepper
  1. Trim the ends off of your green beans and placed in a sauce pot with your diced onions and minced/grated garlic
  2. Fill the pot with desired broth (depending on your dinner protein) until the beans are just covered
  3. Bring to a boil, then reduce heat and simmer, uncovered, for a minimum of 30 minutes – you kind of want to forget about them for a while, the longer they simmer the more flavorful they will be. You may need to add more broth, depending on length of simmering.
  4. Season with salt and pepper to taste – do this after it has simmered, as the beans will absorb salt from the broth.
  5. Strain and serve.
