
The piece of metal that you bake things on, whether you call it a cookie pan, baking pan, cookie sheet, or metal thing that goes in the oven, in the professional world we call them sheet pans, and they come in 4 sizes: full sheet, half sheet, 1/4 sheet, and an 1/8 sheet. While I don’t have a preferred brand, I do prefer this type of baking accessory; a half sheet is about the size of any standard cookie sheet and will fit in any standard oven. It has a lip tall enough that I can bake brownies, layer cakes, sheet pan pie, or roast veggies. You can even purchase something called a sheet pan extender, which is an insert that creates a taller wall, to make a thicker brownie/cake, or you can place a cooling rack in the pan and slow roast some protein. Now all this could also potentially be achieved with any baking pan, but this is an area where you can easily dip your toe into a professional line of accessories for relatively cheap, and everything is uniform in size, so you can purchase several sheets pans, a couple cooling racks, and an extender and you’re all set. That might not seem too exciting to some, but I haven’t told you about the best part yet…SILPATS. Got your interest peaked now, right?! Probably not, but I will! Silpat is a French brand of silicone baking liners (there are many other brand options), that are just divine. They are naturally non-stick, being silicone they’re rated for both temperature extremes, are easy to clean, and last a REALLY long time. In my picture I have two silpats – the shiny one is about a year old, and the other is 10+ years old and is absolutely still usable, though it is finally starting to show some wear and tear. These mats are sized to fit standard industry sheet pans, but that doesn’t mean they won’t fit your pans, you’ll just have to check. Some things require a one time use liner, though, and for that, there are plenty of pre-cut half sheet sized parchment paper packs. No more hassle of cutting a roll of parchment that never really fits, and always rolls back up on you. So, while this all may seem a little underwhelming in the ‘wow’ department, it’s one of those areas where I find these items make things a tad easier, and anything that makes life in the kitchen easier, I’m for.
